The Mona Lisa is non-negotiable for my partner. I am fine with a crowd; I just want to set expectations. When the room is packed, is viewing basically a moving queue where staff can push people through, or can you stay as long as you are not blocking things?

Expect crowd management, not a private viewing. The source pack supports the room being extremely busy; it does not give a guaranteed minimum viewing time. I would treat this as “see it, take the moment you get, move on”, not a place to plan a long stop.
